Mom’s First Gluten Free Recipe
Orange Cookies Gluten Free, Yeast Free
6 Eggs (possibly substitute with egg white or egg replacer)
2 cups of sugar (can substitute with alternative sweetener such as cane sugar, evaporated cane juice or agave)
8 oz Oil (can substitute with apple sauce for moisture)
2 tps Vanilla
6 tps GF Baking Powder
½ tps GF Baking Soda
½ cup Orange Juice, Milk, or Milk Alternative
GF All Purpose Flour as required (no measurement)
Beat eggs, sugar, oil and juice together.
Add baking powder, baking soda and vanilla to liquid mixture. Lightly beat to combine all liquid ingredients.
Begin adding all purpose flour a little at a time until the mixture becomes absorbed into flour and becomes cookie dough. Add small amounts of flour to ensure the mixture is not to dry.
With a teaspoon scoop mixture onto a baking sheet lined with parchment paper.
Bake at 350 degrees for approximately 12-15 minutes depending on oven.
